It's been a while since I first posted about losing weight. I didn't want this blog to become all about that, so I've been waiting until I hit my goal. I set a goal of losing 20 pounds by the end of May. I weighed yesterday, and my total so far is....drumroll please...22 pounds!! I was really shocked when I saw the number on the scale yesterday. I really don't remember the last time I weighed anywhere close to this. It's very exciting to see the number go down. It's definitely more work taking the weight off then it was putting it on, but it's also a lot more fun! I've been really anxious to get to 20 pounds. I guess it's because I've lost 10-15 before, but always ended up putting it back on. I've never lost this much, and this time I'm not worried about putting it back on. I still have moments that I worry that I'll slip back into my old ways of eating, but then I realize that's just not going to happen. I'm already feeling so much better, and I can't wait to reach my final goal. And to top it all off, I found a box of clothes I haven't been able to wear in quite awhile(as in 4-6 years!), and I can now wear some of them!!
I also have a question for you all. Since I started eating chicken a few months ago, I've been discovering what I like and don't like. I've had some really good grilled chicken, and I want to be able to grill some at home. We don't usually grill chicken, so I need some good recipes. One thing I don't like, is when the chicken isn't seasoned much. I like it with a lot of flavor. So, do any of you have a favorite seasoning rub or marinade that we could try?

That is SO exciting!! I think you may have passed those 20 pounds to me and Justus, though. You will have to help me get rid of those pesky few pounds in a few more months.
I learned from Chris that marinading chicken in Italian dressing is really good. Then I saw this thing in Kraft Foods where they marinaded chicken in Italian Dressing mixed with grated parmesean cheese and it was great! We do both of those often.

I personally like Dale's Seasoning (loaded with sodium, but good) or Lea & Perrin's White Wine Worcestershire sauce.
But, the key to good grilled chicken is to keep the grill closed 'til it's done. Then the grill acts like a convection oven. I use a wired thermometer so I don't have to time it. You want to pull it off as soon as it gets to a safe temp.
Good for you. I need to get on your plan. As for chicken, I buy the Lawry's Marinades sometimes and pour them over the chicken let it sit in the frig all day, then grill that night. I really like the teriyaki one.

YAY! Great job! It feels so good to lose weight! I read the other comments and agree the Lawry's marinades and using Italian dressing are both good ideas for chicken. Keep up your good work!

Chicken, I'm not good with chicken ... I buy the Chicken Helper Jambalaya and Thad loves it! Lots of flavor and is pretty quick to make.

Lately, I've been on a quest for the most super-duper-simple, but tasty way to prepare chicken. I usually avoid cooking chicken, because I hate all the prep & cleanup. And I'm scared of giving myself salmonella. And I'm bad about remembering to marinade it. So here's my new tactic. I buy chicken that's pretty thin already, and then sprinkle on some chicken seasoning (I've been using McCormick Roasted Garlic Montreal Seasoning) & salt. Then, I just put it in a little olive oil in a cast iron skillet on med/hi heat. It's done in just a few minutes!
I do want Renee's marinade recipe though!
