New recipe

Creamy Broccoli-Stuffed Chicken Breasts

I got this recipe from a Kraft Food and Family magazine. They have some great recipes. This one is a healthy option, which makes it that much better. I have never made anything like this, where you have to flatten out the chicken. That explains why I used my ice cream scoop instead of a meat mallet(I don't own one). It was a great way to take out some aggression, but it felt like I was actually killing the chicken. It was both rewarding and disgusting at the same time! The ice cream scoop worked pretty well, but I didn't get the chicken quite as thin as it needed to be. I wasn't able to get much of the stuff inside the chicken, so I just put it all around it. That worked pretty well. The creamy sauce on this is really good, and guilt free. It's made from skim milk and cream of chicken soup(98% fat free). Keith said this is definitely going into the rotation!

Those are both great recipes. I can't wait to try them. I have these ingredients on hand most of the time and believe it or not, I have a mallet.
